TIP: When using nuts in baking, they are more flavourful if toasted before using. Spread in a single layer in a dry pan and heat, stirring constantly. Or, place on a baking tray under a grill. Once they start to brown, remove from the heat as nuts burn easily. Cool completely before using.

Take care when melting chocolate for cakes and cookies. It’s easily done in the microwave by breaking chocolate into pieces and placing in a glass bowl. Cover and microwave on medium for 1-2 minutes, then remove and stir. Continue until softened, stopping after every 1 minute. Stir gently and use as required.
